We have this same exact menorah but it looks a whole lot more used with melted wax of every color, everywhere!

Thursday, December 10, 2020.  Wasn’t it just March?  Well, tonight we light the first candle on the menorah and kick off our 8 day celebration.  While it’s hard to be so far apart from our kids and Summer girl, we are always thankful for technology!!  We all bitched and moaned about all the screens and how we were losing our ability to connect on the human level, but boy did it all come in handy this year!  This just reconfirms my belief that everything happens for a reason…..

Today I will be making potato pancakes aka latkes.  Here’s my big tip for making them vegan.  Just leave the eggs out.  I promise they wont suffer.  One year i made a ton of them with eggs and a ton without.  Mitch was my taster and said if anything, he liked the ones without eggs, better!  So don’t stress about egg replacement in the recipe.  We eat ours with applesauce, but there are plenty of vegan sour cream options for the vegans, if you enjoy them that way.

Also grateful for and celebrating the results of our boy Pete’s scans earlier this week.  No signs of cancer anywhere.  He is feeling strong and not only kicked cancers ass, but also kicking ass back in the gym, down 7 pounds from his highest during treatment.  Love you, Peter and so happy for the good report.  See you Saturday for yard yoga.

Gonna get in the kitchen early and start peeling those potatoes and onions.  By the time the sun goes down and the menorah gets kindled, our house should be smelling just like my grandparents apartment building in the Bronx.  Never quite sure how I feel about that smell, but it does evoke sweet memories.

This crazy year, everyone gets to celebrate everything, so happy Chanukah to all and may you always have a candle to light YOUR way, and may you always be in the presence of miracles!
