The film Forks Over Knives opens in Miami and Sunrise, Florida today and I expect to be seeing it on it’s opening day. Carol and I have plans to go together–if anyone wants to join us, the theatre is on 44th Street and Pine Island and we are planning on the 4:05 showing today. That said, things are always subject to last minute change because that’s how life goes! While that is our plan, sometimes the best laid plans can change in an instant.
Speaking of best laid plans…there may be a change in the status of Bally closing the Coral Springs club today, as scheduled. (My head is spinning!) I cannot speak to this as I have, at this point, not heard anything from the horse’s mouth. What I can say, is that regardless of what you may hear today, or over the weekend, I WILL be at Tamarac Fitness Center this Monday, as scheduled, for 11:30 and 12:30 and Wednesday at 11:30 for SilverSneakers classes. Last night was a full house with the boys in the bands in town playing a music festival in Pompano this weekend… and Thursday night dinner, while in town. Thankfully, pasta (whole wheat) goes a long way! with some whole grain bread, “chicken” tenders, veggie “mustgo,” and salad, it was more than enough. A big bowl of fruit, homemade brownies and chocolate covered popcorn surprise (recipe below) everyone left full and there were still leftovers for Derek. It’s always nice when there isn’t even enough room for Mitch and I to sit at the table! Love feeding a bunch of hungry people who appreciate a plant-based meal. The popcorn surprise, which started as an experiment when I found vegan microwave popcorn on sale as a buy one, get one (BOGO) free item. With plenty of popcorn, I made this:
1 bag microwave popcorn
some salted peanuts
small pretzel sticks
about 1/3 of a bag of Ghiradelli semi-sweet chocolate chips
a spoonful of peanut butter (optional)
After microwaving a bag of popcorn, spread it out on a parchment paper lined tray. Sprinkle a couple of handfuls of nuts, broken pretzel sticks and honestly, anything you want (last night I added raisins, some crispy cereal and a few of the chocolate chips). Melt the rest of the chocolate chips in a pan over a low flame, stirring constantly. Add a spoon of peanut butter which can help thin it out. The chocolate will still be a little thick to work with so stir well and then drizzle spoonfuls over the popcorn mix. Stir well each time you go for more to drizzle with. Place the whole thing in the fridge until ready to eat. Watch it disappear! I think I may have already posted this recipe, but trust me, it was worth repeating. Inexpensive, relatively easy and always a big hit.
To those of you that tried to comment earlier in the week and couldn’t, there must have been some sort of glitch that day. It seems to have been an isolated case.
