Hoping you all had a wonderful weekend and a very happy Easter Sunday.
Looking for something to do with all the veggies in your produce bin? Cut them up into somewhat similar sizes or shapes and mix them in a big bowl with olive oil, fresh herbs, or a mix like Braggs herbs, and salt if you absolutely must. Spread them out on a tray and roast them in a hot oven (between 400 and 450) for up to an hour, mixing half way through and checking regularly after about 40 minutes. Some caramelize, others crisp up and some get nice and soft and mushy. It is a great way to create many flavors with one dish and also a great way to clean out your produce bin…and your belly, trust me! Last night I made brussel sprouts, string beans, eggplant, zucchini and one sweet potato and it was delish! You honestly can use ANY veggies you have, so this really is NOT a recipe, just an idea.

With a million ways to find fun in our much needed daily fitness routines, I am excited to be buying Mitch a bicycle for his (tomorrow) birthday. With spring in the air and summer just around the corner, it should be a great compliment to the running and walking he has been doing regularly. It is really important to our health and our fitness goals as well, that we remember to mix things ups! Pounding on our feet every day doesn’t make sense. I know that getting in the pool is exactly what my body needs to burn some extra calories in a way that is different from what I do at the gym. It also gives my muscles a chance to get loose and say ahhhh.
For now, it’s time to get ready for classes. I will be at Tamarac Fitness this morning and at Bally for 11:30 and 12:30 SilverSneakers classes. Speaking of Silver Sneakers:
** Since I still have not gotten a call back from 24 Hour Fitness, I am scheduling 11:30 SilverSneakers classes both Monday and Wednesday at Tamarac Fitness Center (TFC) beginning May 9th. I do NOT want us to miss a beat, so those that are registered will be all ready to make the move with me. If you havent already registered, and plan on coming to class, get in an register soon. With only 30 chairs, I am not sure how it will work out, but I promise that Ron and Wendie WILL add classes as needed. This will be a one week at a time schedule until we really see how many classes are needed to accommodate the amount of people coming. That first week I will NOT turn people away–we will share chairs or something?!?! As for Carol’s schedule, you will have to check with her or with Ron at TFC to see if it will be a Thursday or Friday class. I realize that some of you will be going to 24 Hour Fitness in 2 weeks and I encourage you to take Andrea’s class on Tuesday and Lauren’s class on Thursday. Maybe at some point I will have a class there, as well, but at present they aren’t biting. I will keep you posted. The most important thing is that you know how important working out is for you and that you keep it up!!!

I bought the Groupon for Fusion Fitness. 10 classes for $39.00 is an amazing deal. In addition to Yoga, they have TRX and Kettlebells (which is what I’m interested in doing). Looking forward to some new strength training 🙂
