I know it sounds crazy to think one can be addicted to kale, but I am her. Not kale all ways, but definitely a couple of ways. I am in love with the Southwest Ranch organic Kale Krunch (made by alive & radiant foods) that I buy at Whole Foods. These are kale chips, and sure, you can make your own, but if you are looking for an easy splurge (they are expensive…like almost 6 dollars a bag and I usually whip right through both servings at one time when I buy them because I can’t stop) these are the ones to get. Chock full of everything good for you, you can eat the entire bag for under 300 calories. They are often a mid-day meal for me. The other kale addiction I have also comes from Whole Foods…their garlicky kale salad at the salad bar. After finding myself going to the store up to 3 times a week for it, I decided to try to find the recipe on line and boy does Google make life easy! You can play around with the amounts till you find the perfect recipe for YOU, but here’s the basics…
Break kale into bite-size pieces and place in a large bowl. Puree all the remaining ingredients (except sesame seeds) in a blender or food processor –add water if needed to get to a dressing like consistency. Pore the dressing over the kale and mix and massage into the kale with your hands until the kale is coated. Refrigerate for an hour or so to marinate (if you can wait) …add seeds before serving if you desire.
It takes a little bit of work, but once you do it once, it becomes really easy. It’s a great source of everything that’s good for you. Kale is a great source of vitamins A & C (both great for our skin!) as well as vitamin K, calcium and folate, and more. If you are counting calories, reduce the amount of tahini as that’s about the only ingredient in this dish that does add calories. Personally, I use much less than the 2 tablespoons and find that the tartness of the vinegar and lemon and the salty/cheesiness of the nutritional yeast give it more than enough flavor. I can’t tell you how many servings this will make because…I am addicted. Try it and let me know what you think!
