Summer is here in all it’s glory. Nothing spells s-u-m-m-e-r better than 4th of July.
Get some fun on and revisit your youth. Jump rope, hula-hoop, dive, jump, swim in a pool or the ocean…climb a hill or mountain, and run back down…organize a game of something, run races…have fun and get your exercise in at the same time. Avoid the extra calories, from an extra weekend day and keep yourself busy at the same time. Weekends, wonderful as they are, tend to sabotage our weight loss efforts, and one extra weekend day can wreak havoc! As with all holiday weekends, I tend to pick one day to allow myself to fully indulge and try to treat the other days more like weekdays, at least food wise!
The pasta and tomato casserole went over well last night. I used a pound of pasta and a can and half of crushed tomatoes. It was one of the easiest main courses I have ever made. My goal of making Thursday night feast less caloric and more healthy was definitely accomplished last night. Lots of grilled zucchini and portobella mushrooms along with a huge salad sat along side the pasta. Dessert was big bowls of fruit–cherries, cantaloupe, watermelon and blueberries. Goal accomplished. I do recommend the pasta dish for guests as it made a presentation just like the picture!
Almost done with The China Study, and like Rita, I will be going back and re-reading. It’s what I do with Diet for a New America. I see that the problem with both these books is that most people don’t want to know. Owning information requires us to consider change…but I do think through change, we might make our lives a whole lot better. I do think that The China Study should be required reading!!!!! But since I am all about choice, I hope you will chose to at least consider the information provided in the book.

Since I have a lot of leisure time during the summer, I have been able to really enjoy and revisit many of the chapters in The China Study. It is truly an amazing, eye-opening study on nutrition. I am now looking a dairy products in an entirely new (not positive) way. I googled Dr. Campbell and there are lots of videos to watch him in action. So, if anyone is interested, you can also receive an “earful” of sage advice from this brilliant scientist via the internet.

We had 15 here tonight for a big BBQ dinner with the family in from Atlanta and I made grilled veggie kabobs with zucchini, squash, mushrooms, peppers, onions and eggplant. I also made a pasta salad (whole wheat penne) with broccoli, cauliflower, carrots and peppers. Of course there was food for the many carnivores in the family as well, but I was thinking of you when I put all the veggies together 🙂
