What? They want to take potatoes out of the school cafeterias in an effort to cut back on the amount of fried foods they eat? I can think of a lot of ways they can make those potatoes, without frying them. Honestly, do we really believe that potatoes are THE cause of childhood obesity? I wont go on a rant, but really…maybe a little less mayo, grease, white bread, whole fat milk, cheese, gravy, etc. I haven’t been in a school cafeteria in a while, so I can’t really say much about “what’s for lunch.” If you can, please let me know. I hate when the potato get the bad rap. Apparently potato farmers don’t carry the same weight as say, the dairy industry, though as I do some research, they certainly are upset! Hey, what about a little more physical activity in school?!?!?!
Just a little creativity in the kitchen can really change perspective on vegetables. I roast cut up sweet potatoes and halved brussel sprouts together in the oven. The little brussels pick up the flavor of the caramelizing sweet potatoes while the leaves that peel off the sprouts take on a crispy texture that makes you want to gobble up each and every one. What about baked sweet potato fries? Everyone loves those and sweets are one of the most nutritious foods known to man! Seriously!
Tonight I will be roasting a rainbow of potatoes including purple, sweet and probably a few whites, too. They will go nicely with the grilled veggies subs I will also be making. Last week, I told you I was going to try to make Gardein chicken cutlet parmigiana and let you know how it turned out. I made 16 small cutlets (almost 2 bag fulls) and they were gone instantly. Literally. Since they were a big hit (and since Gardein was BYGO this week at Publix) I am going to make them again, but tonight I will put them on a long sub roll and cut up with the veggie subs. With a salad on the side, VFT Thursday dinner will be complete.

I agree-with all of the variety of potatoes we have now-no one needs to FEAR them. Yeah how about more exercise in the schools-get those kids up and running for a change!
