Just passing thru to share an easy and yummy recipe because here in South Florida the mangoes are starting to ripen on trees, making them very plentiful in the summer months, as is corn on the cob. I love to grill extra corn and then cut it off the cob and mix it up with chunks of fresh mango, diced red onion and a can of black beans. I add chopped cilanto, fresh squeezed lime juice and spice it up with some chili lime spice and cumin. It takes 5 minutes to whip the whole bowl up and makes a really hearty “salsa” that can compliment any dish, or take center stage. It’s chock full of fiber, so it’s really filling and looks really pretty on the table. I often add chopped jalapeno peppers and or sweet red baby peppers. Be creative and use what you love (or have!)
On a totally different note, it was a strange feeling hearing that Tamarac Fitness Center is officially closed. For 36 years, no matter where else I taught, this was always my “home” gym. I was fortunate to transition through all 5 owners (24 years with Ron and Wendie) , and evolving from an “aerobics” instructor to a jack of most trades, teaching almost all formats (no zumba or salsa in these Jewish hips and no kickboxing in this pacifist). When I showed up to do cardio and weights in the morning, it was my favorite class. When I came back to teach SilverSneakers, that was my favorite class, and yoga and Pilates, or even a peaceful blend at night, that was my favorite. I was fortunate to have an amazing run there and thankful for all the wonderful people I met over the course of my adult life!
When one door closes, another always opens. I continue to keep time available to help individuals find their way along their fitness (but also spiritual and emotional wellness) journeys and am available to sub group fitness locally and discuss class options, as I network and see what’s next!
