Though fall is not my favorite season, it surely does have a lot to offer in terms of weather, my favorite holiday, Halloween and we did just come off celebrating a full harvest moon. Makes sense because today, October 1 is World Vegetarian Day which is kind of cool because it appropriately falls on Meatless Monday. World Vegetarian Day was first established in 1977 by the North American Vegetarian Society “To promote the joy, compassion and life-enhancing possibilities of vegetarianism.” It calls awareness to the ethical, environmental, health and humanitarian benefits of a vegetarian lifestyle. Meatless Monday is an international campaign which encourages people to cut out meat on Monday to improve their own health and the health of the planet. Reducing meat consumption by just one meal lessens the risk of chronic, preventable disease and has a strong positive impact on the environment as well. Meatless Monday is part of a much larger Monday campaign to make healthier decisions at the start of each week.
World Vegetarian Day kicks off Vegetarian Awareness Month, so makes sense we are in the midst of a harvest moon.,, and tomorrow is conveniently World Farm Animals Day. Best way I know to give respect to my body as well as all the animals on and off the farms is to eat meatless on Monday, and every day. I realize that might seem extreme to many, but it sure feels right for me…so shine on, shine on harvest moon.
How about a yummy vegetarian chili repice? This site has some great vegetarian chili repices and hearty vegetarian soups. The nice thing about chili and soup is you can make it the way you both like with whatever vegetables and beans you want.I also use the trick of pureeing certain vegetables in my chili.Another trick is to serve the chili over quoina for additional vitamins, minerals and protein. It is easy for her to get everything she needs from a vegetarian diet. Chili is so perfect because it easy to add all the needed foods to it.Enjoy!
