If you are looking for an easy, hearty, meatless Monday meal, why not make sliced portabella mushroom burritos or wraps? Just saute up some onions, peppers or whatever YOU like with yours and then add the sliced bellas to the pan. Throw them all on a wrap. Add some, lettuce, guac, salsa, and cheese (I use a plant-based one) and you have a meatless Mexican dish that is tasty, filling, hearty, heart healthy and low in fat and calories and goes a long way to feed a family!
